Thanksgiving is over and all you have to show for it is half a turkey carcass, three loads of dirty dishes, and that one in-law that insists on sleeping it off in your favorite chair. Oh and the turkey, what to do with the turkey? Gumbo is always a good choice but maybe you’re tired and need other recipe options. So we have two leftover turkey recipes that help out.
Leftover Turkey Recipe #1: Turkey Pot Pie Pastry
Makes 4 Pastries
Preheat oven 400°F
- 2- sheets pastry dough( the frozen kind)
- 2- cup Turkey meat( leftover, shredded)
- 1- can condensed cream of chicken soup
- 1-cup of vegetables of your choice( leftover carrots, broccoli, whatever you have or none if you prefer)
- Salt and pepper to taste
- One egg and one tbsp. of water beaten together for egg wash
Mix the meats, soup, and vegetables. Set aside. Once the pastry dough is thawed, lay out one sheet. Paint some egg wash down the middle from top to bottom, then repeat across the middle from side to side, should look like a window. Place ½ cup of meat mixture inside of each square. On the other sheet of pastry dough paint it lightly with egg wash, flip it over, and lay it on top of the first. Gently form a seal around each mound. Cut out the four pastries with a pizza cutter and place onto a baking sheet. Poke a hole into the top of each one and paint with the remaining egg wash. Bake for 20-25 minutes. Let cool before cutting or eating.
Leftover Turkey Recipe #2: Turkey Hash
- 1lb russet potatoes( peeled and diced)
- 3 tbsp. extra virgin olive oil
- ½ cup diced onion
- 4 cloves of garlic, minced
- ¼ cup diced bell pepper
- 1 tbsp. thyme
- 1 tbsp. sage
- 3 cup leftover turkey meat
- 2 tbsp. butter
- Salt and pepper to tase
Place the potatoes in a medium pot with cold water and bring to a boil. Boil for 4 minutes, drain and set aside.
In a large skillet heat the olive oil over medium-low heat, sauté the onions and garlic until soft, about 4½-5 minutes. Add Bell pepper, herbs, and salt and pepper. Saute for three more minutes.
Increase heat to medium –high, add turkey, potatoes, and butter cook, stirring occasionally, for five minutes. Add ¼ cup of water, stir and cover. Reduce heat to low, cook for ten minutes. Let set for 5 minutes when done.
